Healthy Pumpkin Spice Muffins
1 C sugar
2 eggs
1/4 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp cinnamon
1 C whole wheat flour
2/3 C white flour
1/4 C oil
1/4 fat free vanilla yogurt
1/2 C cold water
1 C canned pumpkin
1. Preheat oven to 325 degrees.
2. Combine all dry ingredients.
3. Add wet ingredients and mix until just combined.
4. Line muffin tins with muffin cups or simply grease.
5. Fill muffin cups about 3/4 full and then bake for 40 minutes.
6. Cool and remove from muffin tins, makes 12 muffins.

ReplyDeleteThey are really easy! Just measuring and mixing. The only trick is not to mix the dry and wet ingredients together too much or the muffins will be tough. You should try them!
